This is a vision I would never tyre of. Our massive magnolia tree is right outside our bedroom window, and I love to stop and admire it every day while it’s in bloom.
Unfortunately, after taking this picture, the leaves have sprouted and most of the flowers have vanished, which is why we make such a big deal about it every spring because the flowers don’t last long, particularly in the blustery weather.
Even though the weather has been beautiful in these parts this week, the mornings can still be cool, so I’ve been eating my porridge on those cooler mornings. This was a simple banana porridge with unsweetened almond milk, raspberries, sunflower seed butter, and coconut sugar on top.
This week, I’ve been devouring the green smoothies and can’t get enough of them; they’re just what I need right now. This banana-peanut-butter smoothie was the ideal snack before bringing my son for a stroll. Easy is often the best choice!
Pear, broccoli, unsweetened almond milk, lucuma powder, and vanilla protein powder were used in another green smoothie, this time for breakfast. This prepared me for a fruitful day at work as well as some fun in the pool.
We’ve been trying to make the best of what we have in our freezer and pantry for the last month or so before going to the grocery store. To be fair, it has resulted in some unusual meal combos for me, but they have also resulted in some tasty ones, such as this plate of scrambled eggs, steamed broccoli, and avocado. This is my kind of dinner!
A perfect midweek lunch was this goat’s cheese and red onion omelette with mixed leaves, avocado, and chilli chutney. I’m currently in an egg funk!
Take a look at the silky-smooth almond butter! To get you through an afternoon of writing, nothing beats a large dollop of almond butter and a sliced pink lady apple. This timeless mix will never get old to me.
Being willing to eat outdoors once more is one of my favourite things during this time of year. In the sunlight, I shared a cup of The Coconut Collaborative strawberries and chocolate coconut yoghurt ice cream that I purchased from Sainsbury’s.
My little blog was included in this month’s Fit and Healthy magazine, which made me very happy. Those Protein Peanut Butter Cup Brownies are to die for!
So, we’ve got a busy Sunday ahead of us, which involves setting up Aiden’s nursery, which I’m looking forward to. I’m hoping for some sunshine so we can enjoy another family friendly weekend in the garden and maybe go for a nice walk as well.
