There are often moments during the week when I fancy a late-night treat and recently this has become a more frequent occurrence. Now I’m all for a chunk of my favourite dark chocolate, a wedge of carrot cake or ice cream to indulge my sweet cravings, but sometimes, especially if I have over-indulged and still want my sweet fix it’s nice to have something healthier on standby.
A few weeks ago I mentioned in a post that I had made some salted almond butter fudge and was going to share the recipe. Well, I’m finally getting round to sharing it now, but I’ve changed it up slightly and added in some scrummy extras. If there were two things that were just meant to go together and that’s peanut butter and chocolate, throw in some sea salt and I would pretty much say that I was knocking on heavens door.
These are best served straight from the freezer like they are in the pictures so that they ‘snap’ when you eat them. I managed to get twelve large Jemma-sized portions from this recipe, but if you are using smaller moulds you will yield more as the recipe makes a lot of mixture.
Peanut butter, almond butter, cashew butter, any nut butter would be perfect in these. I use almond butter way more than peanut butter these days, but I can never resist the urge to dip my spoon into a jar of PB.
Obviously, these are very unlike traditional fudge, but they do taste amazing and I prefer this healthier version compared to the sugar coma that I’ve encountered with the other variety in the past. They’re even more delicious when smeared with some extra peanut butter…naughty I know but who doesn’t like an extra helping of PB?
With only 5 ingredients these are so easy to make, I found that the hardest part was not to eat them all in one go! Check out my recipe page for some more healthy inspiration.

An utterly gorgeous recipe for healthier alternative to fudge for when you’re needing a sweet fix.
5 tbsps coconut oil
5 tbsp smooth peanut butter
100g dark chocolate
1-2 tbsp honey or maple syrup
pinch of sea salt
- Melt the coconut oil and chocolate together in a bowl in the microwave on a low heat for a few minutes. Stir together to combine.
- Pour in the peanut butter, honey and sea salt and mix together until smooth.
- Transfer the mixture into paper cases or a silicone mini cupcake mould.
- Place in the freezer for at least an hour or until fully set
- Try not to eat all of them in one go, enjoy!
